Step into the boots of the new Executive Chef at 'KA at Waimarino Lodge'—a kitchen built on fire, sweat, and obsession.
In a raw, unscripted journey across the region, we hunt down the best: the renegade foragers, the relentless farmers, the artisans who carve perfection from the land.
This is food at its most primal—rooted in the people, the place, and the pursuit of something unforgettable


Each episode of CARVE is a hunt—not just for an ingredient, but for the soul of it.
A helicopter drops into the depths of Milford Sound, where our chef hauls crayfish straight from icy waters. Deep in the beech forests, they rip wild mushrooms from the earth, hands stained with the scent of damp leaves and decay. At dawn, knee-deep in a glassy river, the line goes taut—trout caught in the mist, the fight as much a part of the dish as the catch itself.
Out here, cooking isn’t just technique—it’s survival, instinct, and respect for the land. Every fire, every blade, every bite is shaped by the raw, unforgiving beauty of the wild.
A menu isn’t written in a kitchen;
it’s carved from the journey.

episode structure
CARVE starts with a 10 episode season - Episodes One and Ten being unique in that they bring the season together as a whole and make it a connected story. This structure is easily expandable to include more episodes if required, yet allows for a cohesive story.

2 - 9.
In Episode One we meet our chef, the lodge and begin our journey. We will learn about them and their food philosophy, the dreams and goals for this journey and their inspiration from the land where Waimarino Lodge is located.
This episode sets our series quest in motion.
Each Episode from Two to Nine will feature an incredible adventure to source the best ingredients and finding inspiration for potential dishes on the KA menu. Focused around sourcing a key ingredient and the experience of retrieving it, the episodes will also feature adventures that guests of the Waimarino could possibly go on themselves. Each episode will finish with a team meal, a glass of Gin and the Chef writing their dish in the notebook.

For our final episode of the season, it all comes together and the chef cooks at the newly finished lodge for a group of friends we have meet throughout the season. The menu journey complete, with the perfect ingredients and stories to tell from along the way.
